Bon Appetit announces menu for Earth Day Thursday

Did you know that the food system is responsible for one-third of global greenhouse gas emissions? That means that our food choices have more of an impact on global warming than either the transportation or mining industries. Bon Appétit Management Company is trying to do something about it, and we’d like your help in getting the word out.

Low Carbon Diet Day will be held on Thursday, April 22, in conjunction with Earth Day. We have written our menus to teach guests the five principles of going on a low-carbon diet: You bought it, you eat it, so don’t waste food; make “seasonal and regional” your food mantra; move away from beef and cheese; don’t buy air-freighted food; if it’s processed and packaged, skip it.

Our students will continue to have extensive choices but will be encouraged to taste new items that are more climate-friendly than some regular features. Our menu Thursday will include:

  • Individual Draper Valley Farms chicken pot pie with herb dumplings
  • Veridian Farms Cannellini beans tossed with Organic Brothers’ mixed baby greens and leeks with fresh pesto
  • Chicken tinga tostadas with braised chicken, chorizo, Yukon gold potatoes and pintos
  • Honey soy marinated Columbia River steelhead with Kinsey Farms asparagus
  • Three different pizzas made without cheese, including barbecue chicken, Oregon shrimp and “meatlovers” with roasted leeks and marscapone
  • Willamette Valley Farms blackberry rhubarb cobbler

Guests, staff, faculty and non-board plan students are more than welcome to join us for only $6.50 per person. Lunch is served from 11 a.m. to 2 p.m.
